Thanksgiving is approaching, and this year, I chose to spend it with my chosen family, my friends. Being someone who loves to cook for her loved ones, I decided to host the Friendsgiving at my place. But here was the challenge: a couple of my friends do not eat turkey or beef, putting the star of the holiday meal out of the question. So, I scratched my brain a little and decided to prepare a Friendsgiving chicken shepherd’s pie.

Made with fresh ingredients and a lot of love, this Friendsgiving chicken shepherd’s pie is sure to tantalize the taste buds of my ride or die buddies. For filling, I have used frozen peas, diced carrots, shredded chicken, onions, celery, and fresh herbs to bring an umami flavor. Mixed in with flour and simmered in chicken broth, the pie filling is topped with creamy mashed potatoes. I cooked the pie with my trusted companion, my 8-inch cast iron skillet.

Ingredients Needed:

  • 4 tablespoons butter
  • 1 finely diced onion
  • 2 cloves of garlic (minced)
  • 2 tablespoons of flour
  • 350 gm of mixed vegetables of choice (I used carrots, celery, frozen peas)
  • 350 gm cups of cooked chicken
  • 400 ml of chicken broth
  • Salt
  • Ground black pepper
  • Butter
  • 150 ml milk
  • 250 gm potatoes
  • Fresh herbs (I used rosemary and thyme)

Instructions:

  • Prepare the Filling: Add the butter to a heated cast iron skillet. Sauté onions in the butter till fragrant, about 2-3 minutes, and then add garlic and cook for a minute. Once the onions and garlic are cooked, add the flour and stir until no lumps are left. Then, put in the vegetables and chicken until well combined. At last, pour the broth, herbs, and seasonings and stir. Bring the filling to a boil on medium-low and let it simmer for about 10 minutes
  • Mash the Potatoes: Preheat the oven to 175 degrees Celsius. Peel, chop, and boil potatoes until tender. Then drain and mash them. Add butter, milk, and mix in.
  • Spread and Bake: Spread the mashed potatoes on top of the evenly layered filling in the skillet. Evenly spread the potatoes and then score the top with a fork to give it an extra crispy texture. Put in the preheated oven and bake for 30 minutes at 175 degrees Celsius or until the edges are brown
