I am tired and frustrated with blunt knives. Those who cook will understand this sentiment. So naturally, when I came across the C-200 knife by Seattle Ultrasonics at CES 2026, my interest was piqued. Dubbed as the world’s first ultrasonic chef’s knife, the C-200 vibrates over 30,000 times per second. Imagine slicing tomatoes with this thing. I can practically see the paper-thin slice in my mind right now.
CES, the biggest playground for tech geeks, makers, and players alike, became the ultimate platform for this ultrasonic knife to make its debut. The high-tech, 8-inch knife behaves more sharply than it actually is.
The knife comes with an orange button on the handle that activates piezoelectric ceramic crystals mounted on the blade. These crystals then expand and contract at a microscopic level to generate a shock wave, which causes the metal top to vibrate at an unnatural speed.
Mimicking the sharpness of industrial cutting machines, the technology behind the ultrasonic C-200 reduces the friction from the blade, so the cut needs about 50 percent less force. The ultrasonic resonance also creates a non-stick effect to prevent soft and sticky foods from clinging to the blade.
I don’t know about you, but I think this is one heck of an invention for someone who loves to create recipes and spends more time working with the kitchen knife than on the phone. Its cordless design is a thoughtful addition. Can you imagine working with a corded kitchen knife? Ugh, the headache.
The C-200 takes care of it all. Its blade is made from the premium triple-ply Japanese steel. The removable battery pack, nicely concealed in the handle, lets you work smoothly. When the battery runs out, you can simply charge it using a USB-C cable. Now, I am slightly disappointed that the Seattle Ultrasonics C-200 knife still needs sharpening, but it is good to know that it won’t be as often as its non-ultrasonic counterparts.
The maker is also offering an optional wireless charging tile, made from solid hardwood, which comes with a magnetic attachment. This simple yet effective inclusion makes the knife and charger mount on the wall without hassle. It is currently available for pre-order for $400 with expected deliveries within this month.
