Pumpkin Chocolate Truffle Bars, Simple and Delicious Fall Recipe

Pumpkin is probably one of the most versatile fall ingredients. With a little bit of imagination and skill in the kitchen, you can do wonders with this amazing vegetable or fruit, if you will. Once I spot a ripe pumpkin at the farmer’s market, my brain goes into overdrive, thinking of recipes I will create from one giant pumpkin.

So the first pumpkin I got this season went into making a jarful of puree, used for pumpkin chocolate chip cookies and pumpkin truffle bars slathered in dark chocolate. While the jar is empty now, I am prepping another giant pumpkin in the oven to make more puree. The pantry should be stocked while it lasts, no?

On to the recipe, then. These pumpkin truffle bars are gooey, almost fudgy, and so delicious that you will want to make a handful of platters. Some for your family and friends, and a whole lot just for yourself.

  • Prep Time: 15 Minutes
  • Cook Time: 15 Minutes
  • Active Time: 30 Minutes
  • Wait Time: 1-2 Hours
  • Difficulty Level: Incredibly Easy

Ingredients:

  • Puree – 80 gm
  • Butter – 80 gm
  • Cream cheese – 100 gm
  • Condensed Milk – 50 ml
  • Crushed Crackers of choice – 100 gm
  • Brown Sugar – 40 gm

Instructions:

  • Mix and Cook: Start by adding the butter, puree, cream cheese, and condensed milk to a saucepan on low heat. Mix the ingredients until well-combined and thickened, then add the crushed crackers of choice and sugar. Cook the mixture until it thickens in consistency
  • Chill: Now spread this truffle mixture onto a flat surface and keep it in the fridge to chill for one to two hours
  • Coat in Chocolate and Serve: Once the truffle has hardened after chilling, cut it into bars and slather them in dark chocolate. Sprinkle with sea salt if preferred and serve

That’s it! Your decadent chocolate-covered pumpkin truffle bars are ready to be devoured by family and friends. I like these to be gooey and ready to melt in the mouth, so I add two tablespoons of milk when melting the chocolate to create a melting bar-like dessert. You can skip this particular step and use solely dark chocolate, which will harden to give you a really decadent treat that will win over your friends and family this Thanksgiving.
